A Highly Nutritious and Delicious, and QUICK Cheesy Cream of Broccoli Soup

Broccoli is high in vitamin C, as well as dietary fiber; it also contains multiple nutrients with potent anti-cancer properties, such as diindolylmethane and small amounts of selenium.[7] A single serving provides more than 30 mg of Vitamin C and a half-cup provides 52 mg of Vitamin C 

Steaming broccoli for 3–4 minutes is recommended to maximize potential anti-cancer compounds, Boiling reduces the levels of suspected anti-carcinogenic compounds in broccoli, with losses of 20 – 30% after five minutes, 40 – 50% after ten minutes, and 77% after thirty minutes. Broccoli has the highest levels of carotenoids in the brassica family.[15] It is particularly rich in lutein and also provides a modest amount of beta-carotene.[15]
A high intake of broccoli has been found to reduce the risk of aggressive prostate cancer.[16]  Broccoli consumption has also been shown to be beneficial in the prevention of heart disease

Recipe
 
Single Serving (1 cup)1/2 cup lightly steamed broccoli (no more than 3 minutes)
1/2 of a small avocado
1/4 tsp *Quantum Nutrition air-dried Pink Salt 
1 - 2 Tbs *Quantum Nutrition Nutritional Flakes
1 tsp minced onion or dehydrated onion
1 Tbs. Extra Virgin cold pressed olive oil
1/4 cup filtered water (depend upon preference of consistency)

Place all ingredients in a glass jar or blender container and blend to preference of consistency.  You can eat as is at room temperature, or if already in a glass jar, place the jar in a pan with water and lightly warn the water in the pan to slowly warm the soup (this prevents you from cooking out all the wonderful nutrients). Pair this with some homemade cultured sauerkraut (see former posts for this recipe) as this will help with the digestion of the broccoli and help enhance the uptake of nutrients in your digestive tract.
